Pan - Seared High Country Salmon

Pan-seared High Country Salmon with a fusion of local produce. 

Chef Josh Martin, presents this mouth-watering salmon with gnocchi prepared using parmesan from Geraldine Cheese Company, sautéed chorizo from Geraldine Butchery and daubs the whole dish with Barkers' new Mediterranean Vegetable Chutney. 

Garnished with shaved fennel, baby spinach and fresh herbs.
