The big part of the dish is what it is served on….Temuka Pottery! This is also a very local product that ties the whole dish together. Why would you not use what is in your backyard?
Any fish is nice fish, but Aoraki Salmon takes the cake. So using the fish of our backyard with its rich flavour was a no brainer. We could use salmon in a wide range of dishes but having it in a quiche is a light and healthy alternative with flavours that leave your taste buds singing.
