Grilled Halloumi Salad with Balsamic Reduction
A vegetarian surprise with a mouthful of flavours – the salty halloumi sourced from Geraldine Cheese contrasts with the fresh crisp salad of capsicum, lettuce, cherry toms and micro-herbs. Combine this with 3 or 4 thick slices of crumbed and deep-fried eggplant and the tasty marinade of olives with cinnamon, star anise, cardamom and you have a very filling vegetarian dish.
