Hogget from Eastside Butchery prepared three ways , saddle sous vide and chargrilled, belly flap rolled then slowed braised and chargrilled, and slow braise crouquette breaded and deep fried served with cermoula sauce, a Hutton's Honey and onion puree, baby peas, broad beans, baby carrots and panisse chips finished with port wine jus and crispy onions.
