Canter-Brie: A brie of distinction, clean, acidic, rich and creamy with a complex yoghurt background. A living cheese that ripens to full “French” flavour and flows from the rind when mature. A soft, white, cloudy ring tasting of fresh mushrooms and straw surrounds the cheese. It is as good to eat young as it is mature.
